As the summer approaches, hotels and restaurants in South Korea have started launching new and unique summer flavors of bingsu – shaved ice! These creative and luscious takes of Korea’s favorite summer dessert will make you want to plan your trip to Korea much sooner than later!
Four Seasons Hotel Seoul in Jongno District is one such hotel that has released its summer bingsu flavors that will leave your mouthwatering.

The unique summer bingsu flavors of this year are a celebration of local ingredients such as Jeju apple mango and red bean. These flavors come together with international dessert concepts such as rice pudding and pavlova. These bingsu dishes honor the timeless dessert traditions of Korea and bring them modernity with international concepts. You can customize the bingsu as per your taste if you want something else.
Apple mango pavlova bingsu
Featuring Jeju Apple Mango, the shaved ice contains 100% local organic milk along with honey. It has a crispy meringue on the outside and is soft like a marshmallow on the inside. As for the flavor profile, there’s tangy mango and passion fruit inside. There are layers of flavors in this unique summer bingsu creations – mango sorbet, mango compote, strawberry gel and vanilla cream. When all of these come together, you can enjoy the playful textures and summer flavors.
Maru bingsu
Combining Korea’s love for red bean paste and shaved ice, this unique summer flavor of bingsu is topped with vanilla ice cream. You can enjoy the spicy candied ginger toppings which cut through the sweetness of bingsu. The red bean past, a nostalgic flavor, complements the contemporary, crunchy tuile. You can customize by adding condiments such as bungeoppang, vanilla ice cream, or condensed milk.
Green tea bingsu
This bingsu takes inspiration from green tea with sweet, bitter, and smoky flavors. It has a velvety rice pudding over shaved ice – all made with 100% organic milk and honey. The hoji tea ice cream perfectly balances the bitterness of local tea. There’s a little hoji tea tuile in shape of tea leaves. The three condiments – crunchy puffed rice, hoji tea ice cream, green tea sauce – all increase the texture, creaminess, and flavor of the green tea bingsu.
The new menu of bingsu will be available until September 30, 2024 from 11:00 am to 10:00 pm.
