What is Dakgalbi?
Dakgalbi is a homely and comforting Korean dish full of ingredients like tender chicken, vibrant vegetables, and textured rice cakes. All these are drenched in a gochujang-based sauce. And that is essentially a reflection of the richness and vitality of Korean culture.
What makes this regular dish stand out?
Well, the chicken is quite tender, a thigh meat cooked to golden hue. To this, colorful veggies like cabbage, perilla leaves, scallions, and sweet potatoes are added. Next comes the rice cakes, with their texture, subtle sweetness, mild spicy notes, and a hint of smoky flavor. And if you want more of a spicy kick, you can add red chili peppers!
The most important and crucial part is the sauce! The gochujang-based sauce is fiery – a mix of gochujang, soy sauce, garlic, and sugar. And all this coats the delicious goodness, giving each chicken piece, veggie, and rice cake a hint of spicy sweetness.
All in all, it is a balanced blend of flavors and textures. So, don’t miss out on this dish, it could be your next favorite dish from South Korea!
What does the word ‘dakgalbi’ mean?
The name comes from native Korean language.

But, the dish is not about chicken ribs! Korean linguists can be confusing!
Galbi is also a term for marinated meat in Korean lingo, specifically marinated beef or pork ribs. But, the dish is also not a chicken and beef dish. Rather, the galbi is a reflection of the marinated aspect of chicken.
Interesting, isn’t it?

Is dakgalbi a single dish or it is served with something else?
While the dish in itself is a star, some side dishes can give it an extra oomph!
The Dakgalbi feast comes with an army of “banchan,” small side dishes like kimchi, japchae (glass noodles), and gakdugi (radish kimchi). Each bite bursts with unique flavors, making every mouthful an exciting exploration.
Once you’ve eaten the chicken, it doesn’t mean that it’s all done. You can add some rice over the leftover sauce in the hotplate. It soaks up all the goodness of delicious flavors. Some nori (seaweed) and sesame seeds are added to make it into dakgalbi fried rice.
It is also often accompanied by makguksu – a refreshing cold buckwheat noodle dish.
The history of dakgalbi
Spicy chicken stir-fry, or Dakgalbi, is a super popular Korean dish enjoyed worldwide today! But its journey from humble beginnings to global fame is pretty interesting.
Dakgalbi’s story starts back in the 1960s, after a tough war in Korea. In the city of Chuncheon, things were rough, and people couldn’t afford expensive cuts of meat. So, clever cooks started using chicken, which was much cheaper. This is how Dakgalbi, this delicious dish we know today, was born!
Back then, Dakgalbi was actually cooked on a grill, not stir-fried like it usually is now. You can even find some restaurants in Chuncheon that still make it the old way!
Chuncheon Dakgalbi
Historically, dakgalbi was cooked over charcoal and not stir-fried. You can still find some restaurants in Chuncheon that use this traditional method of cooking.
As teppanyaki gained popularity in Korea, Dakgalbi embraced this new cooking style. This opened the door for adding various vegetables to the dish. The 1990s saw the dish take on its familiar form, loaded with cabbage. This addition not only made it more affordable but also easier to eat with the boneless chicken.
While there’s something to be said about the charcoal grilled chicken, the convenience of making it in a stir fry format has made it a household dish.
